  STILL OBSERVED A GAP UNDER DOOR GOING OUT TO ROOF TOP TERRACE OFF OF THE KITCHEN. CLOSE UP ANY
  GAPS AROUND EXTERIOR DOORS TO PREVENT THE ENTRANCE OF RODENTS AND INSECTS. THE CHEF ON DUTY
  SAID THAT THE PERSON IN CHARGE IS AT THE STORE PURCHASING THE WEATHER STRIPPING TO CLOSE UP THE
  GAP.

  (M)      Outer openings - protected.
   
        (1) Except as provided in paragraphs (M)(2) and (M)(3) of this rule, outer openings of a food service operation or
       retail food establishment shall be protected against the entry of insects and rodents by:
   
            (a)      Filling or closing holes and other gaps along floors, walls, and ceilings;
   
            (b)      Closed, tight-fitting windows; and
   
            (c) Solid, self-closing, tight-fitting doors.

  ALL OF THE CUTTING BOARDS WERE SOAKING IN BLEACH WATER AT THE TIME OF INSPECTION. THE CHEF SAID
  THAT THEY WOULD DISCARD ANY STAINED CUTTING BOARDS THAT COULD NOT BE CLEANED.
   
  THIS INSPECTION WAS A FOLLOW UP TO THE PREVIOUS INSPECTION. ALL PREVIOUSLY CITED VIOLATIONS
  HAVE BEEN CORRECTED EXCEPT FOR THE ABOVE CITED VIOLATION. A FOLLOW UP OF THE ABOVE CITED
  VIOLATION AND ON THE CUTTING BOARDS WILL BE CONDUCTED DURING THE NEXT REGULAR INSPECTION.
